wash the bittergourd and pet dry
slice off the two ends then cut the bittergourd into thin slices
put these slices in a bowl and sprinkle salt over it
mix well and keep aside for 30 minutes
after half an hour, drain all the excess water from bittergourd
in a bowl, take gram flour, corn flour, rice flour, salt, red chili powder, turmeric powder, dry mango powder and sesame seeds
mix well
add the bittergourd slices to the flour mixture
sprinkle few drops of water so that the spices coats all the pieces well
haet oil in a deep pan on medium flame
add the masala coated slices little at a time and fry till crispy
drain and put onto a paper towel
serve as sancks or as side dish for rice
