Ingredients

Serves : 6
  • Softened unsalted butter plus more for greasing 9 tbsp


  • All Purpose Flour 1 1/2 cups


  • baking soda 1 tsp


  • Cornstarch 3 tbsp


  • Granulated sugar 3 1/2 cups


  • Salt 1/8 tsp


  • Large Whole Eggs 3 nos


  • Sour Cream 1/2 cups


  • Vanilla Extract 1 tsp


  • strawberries plus more to garnish 500 gms


  • FOR ICING WE NEED:Powdered Sugar 1 1/2 cups


  • Cream cheese softened 8 ounces


  • Unsalted butter 2 piece


  • Vanilla extract 1 tsp

Directions

  • For the cake , preheat the oven at 350° F (180°c). Grease the pan and set aside .
  • Sift together the flour , cornstarch , baking soda and salt .
  • Cream the butter and the 1 1/2 cups sugar with the help of a hand blender till light and fluffy . Add the eggs one at a time , ensuring each addition to be well mixed in.
  • Add the sour cream and the vanilla and mix until combined .
  • Add the dry ingredients and mix till no lumps are seen .
  • Bake the cake for about 45 - 50 mins . Remove the cake immediately and place on a cooling rack and allow to cool completely .
  • Stem and halve the strawberries and mash them . Sprinkle the remaining 2 tbsp sugar over them and allow to sit for 30 mins.
  • For the icing , combine the powdered sugar , cream cheese , vanilla , butter and dash of salt in a bowl . Mix until very fluffy .
  • Slice the cakes in half to make two smaller cakes . Spread the strawberries evenly over each cut sides of the cake halves , pouring on the juices as well .
  • Place the cakes in the freezer just for 5 mins , just to make icing easier .
  • Remove the cake halves . Use a little less than one third of the icing and to spread on top of the strawberries in the bottom layer .
  • Add half of the remaining icing on the top , spreading evenly .
  • Leave it plain or garnish with strawberry halves .
