Maida (All purpose flour) 1 1/2 cups
Baking powder 1 tsp
Baking powder 1/4 tsp
Powdered sugar 3/4 cups
Butter 100 gms
Large Eggs 3 nos
Fresh orange juice/ tetra pack one. 150 ml
Orange Essence 1 tsp
Orange Rind 1 tsp
Tuti Fruti 1/4 cups
Pre heat oven at 200℃ for 12-15 minutes
Grease a 8 inch square mould with some butter
Sift the flour, baking powder and baking soda. Keep aside.
In a large mixing bowl, cream together butter and sugar for 1 minute until its fluffy
Now add one egg at a time and continue whisking.
Further add orange essence. Add orange rind and mix lightly with a spatula
Now alternatively add flour and orange juice in 3 parts and fold gently to get a lump free batter.
Also add tuti fruti, keeping aside some to sprinkle at the top.
Pour this batter in the greased cake tin and tap the tin gently twice to remove excess air bubbles
Bake this at 180℃ for 30 minutes
Different oven might take different time, so kindly go by your judgement of baking
When done, check by inserting a toothpick at the centre. If it comes out clean, the cake is done.
Let this cool completely and then demould. Cut in slices and serve with black tea or coffee
