  • 1 cups all purpose flour

  • 2 nos eggs

  • 80 gms butter

  • 1/2 cups sugar

  • 1/2 tsp baking powde

  • 1/4 tsp baking soda

  • 1/2 tsp vanilla essence

  • 1 tsp pineapple essence

  • 1/2 cups sugar

  • 1 tbsp honey

  • 1/2 cups water

  • 1 cups diluted mixed fruit fam

  • 1/2 cups dessicated coconut


  • First preheat the oven at 180 degree celcious for 10 mins.
  • Now grease the pan and line it with parchment paper.
  • Seive all purpose flour, baking soda and baking powder from a height to get fine lump free mixture.
  • In another bowl beat sugar and butter with the help of electric beater till light and fluffy.
  • Next add in eggs 1 at a time and beat the mixture till light and airy.
  • Fold in seived all purpose flour mixture in the above beaten egg mixture gently through cut and fold method.
  • Transfer in cake tin and give it a tap for 2 - 3 times to remove air bubbles.
  • Bake this in oven for 20 mins or till done.
  • For sugar syrup boil sugar honey and pineapple essence till it's little thick.
  • Once the cake is done demold it and pour the syrup when the cake is still warm.
  • Now smear the diluted mixed fruit jam over the cake and spread dessicated coconut on the top
  • Cut in desired shape and serve.
