Ingredients

Serves 4

  • Payasam Ari/Unakkal ari 2 cups

  • Jaggery/Sharkkara 300 gms

  • Coconut milk 1 cups

  • Cumin powder/Jeerakappodi 1 tsp

  • Cardamom powder/Elaykkappodi 3/4 tsp

  • Coconut Bits 1/2 cups

  • Raisins/Kishmis 3 tbsp

  • Peanuts 3 tbsp

  • NOVA Ghee/Neyy 2 tbsp

Directions

    Heat a pan on a medium flame

  • 02

    Add ghee and fry peanuts,coconut bits and kishmis

  • 03

    Drain and set them aside

  • 04

    Wash the rice thoroughly

    Add the rice in a vessel and bring to boil after adding 3 cups of water

  • 06

    Check whether the rice cooked well and water is evaporated

  • 07

    Transfer finely cooked rice to a a heavy bottomed pan/Uruli

    Add third coconut milk to this and bring to boil

  • 09

    Now, add second milk to this and stir frequently till the milk is reduced to half

  • 10

    Bring down the flame to low and let it boil again in this milk

  • 11

    Meanwhile,prepare melted jaggery water

  • 12

    Add this to the payasam and stir well

  • 13

    Let it boil and add the first milk to this

  • 14

    Add powdered spices to this and mix well

  • 15

    Add fried peanuts,coconut bits,raisins to this

  • 16

    Stir well again,Let it simmer for two minutes

    Switch off the flame now

  • 18

    Ari Payasam is ready,Serve it warm or chilled
