  • For Filling,1 cup capsicum nicely chopped

  • 1/2 cup carrot chopped

  • 1/4 cup boiled or frozen green peas

  • 1/4 cup grated cheese

  • 1 boiled and mashed potato

  • 1 onion nicely chopped

  • 1 green chilli nicely chopped

  • 3 garlic cloves nicely chopped

  • 1/2 tsp chilli flakes

  • 1/4 tsp roasted and crushed corriender seeds

  • 1/4 tsp roasted and crushed fennel seeds

  • 2 pinch roasted and crushed carom seeds

  • 2 tsp lemon juice

  • 1/4 tsp salt as required add more

  • 1 cup oil for cooking and frying

  • 4 to 5 optional flavoured papad

  • 2 tsp maida for make paste for stick

    For Filling, heat oil in pan,add chopped garlic, after 10 seconds, add chopped onion, when colour change add chopped carrot, capsicum, green chilli and saute it.

    After a minute add mashed potato, frozen green peas, salt, roasted and crushed carom,fennel and coriander seeds, cook for a minute add switch off gas.Now add lemon juice, fresh coriander and grated cheese and mix well.

    Take maida in a bowl add water and make paste for stick the edges.

    Now cut the papad in half, take water in deep plate,dip a piece of papad, when it will soft,keep out from water carefully.

    Now fill the papad with stuffing and seal the edges with maida paste.

    Now heat oil in pan add fry the papad samosa in low flame, it will be done very quickly, when one side is light brown in colour and crisp flip it to cook other side.

    Like this prepare one by one and fry, do same with all, when all done serve it hot with sauce or chutney.
