Ingredients
Serves 3
For Kneading,wheat flour 1 1/2 cups
Fresh whole wheat bread crumbs 1/2 cups
Semolina 2 tsp
Sour curd if need add more 3/4 cups
Baking Soda 3/4 tsp
Sugar 3/4 tsp
Salt or as per taste 1/4 tsp
Oil for kneading 3 tsp
For Stuffing,paneer 300 gms
Green chilli nicely chopped 1 nos
Nicely chopped onion 2 tsp
Nicely chopped fresh coriander 2 tsp
Roasted cumin seeds 1/2 tsp
Nicely chopped soya leaves 1 tsp
Salt or as required 1 pinch
Oil for Frying 3/4 cups
Directions
Take Whole wheat flour,bread crumbs, semolina, salt, sugar,baking soda,oil and sour curd(if need add more) and knead soft dough and keep aside it for atleast 2 to 3 hour's at hot place.
For Stuffing, mashed paneer nicely in deep bowl,add salt, chopped onion, chilli, coriander,, soya leaves and roasted cumin powder and mash well.
After 3 hours take rest smooth dough and make balls of it,now take a ball,flat with, palm and filled with soya flavour paneer stuffing in the centre and give chapati shape but not so thin, with the fingers,if you need do with rolling pin.
Now heat oil in pan and drop carefully stuffed chapati because oil is too hot, when one side done, flip it to cook and crisp other side, when both side done, place in tissue paper to remove excess oil.
Like this prepare all Bhatura.Now serve this Bhatura hot for more flavour with rajma or chole or dal makhani
You can pan fry or deeo fry it.
