Ingredients
Serves 10
FOR DOUGH - All purpose flour/ maida 2 cups
Salt - to taste 1/2 tsp
Ghee 1/3 cups
STUFFING - Boiled potatoes/ aloo 250 gms
Cumin seeds/ jeera 1/2 tsp
Ghee 2 tbsp
Chopped mix dry fruits 1/2 cups
Dry mango/ amchur powder 1 tsp
Udupi Ruchi Garam masala 1/2 tsp
Ginger chili/ adarak mirch paste 1 tsp
Daal masala 1 tsp
Salt - to taste 1/4 tsp
Ghee-for deep frying 4 cups
Directions
Make a roti like dough by mixing all the ingredients as mentioned (for dough) above. Rest it covered for 30 minutes.
Heat oil in a pan and add cumin seeds to it. When seeds crackles, add ginger chilli paste and saute for a minute.
Add chopped dry fruits and saute for 1 minute.
Add potatoes and remaining spices and salt. Saute for 15 to 20 minutes on low flame. Let the mixture to cool.
Divide the dough into 30 equal parts and roll them like thin rotis/chapatis.
Take a roti, put 1 teaspoon of stuffing at the center of the roti and cover another roti and fold the edges to make a design of chanderkala.
Heat ghee in a pan and fry the chanderkala on low flame till they become golden and crispy.
