In a pan add 1 tbsp of oil
Heat it & add
Next add in cubed onion & fry for 3 mins
Add tomoto & fry for 2 min
Add sesame seeds & fry for a min
Lastly add curry powder & fry for 2 mins
Allow this mixture to cool
Grind it to a smooth paste with coconut & coriander with some water
Take a kadai & put 2 tbsp of oil & heat it
To this add 1/2 finely chopped onion & fry it
Then add in chopped brinjal & fry for 3-4 mins
Next add the grounded mixture & fry it for 3 mins
Add water & salt
Boil for 20 mins ( or until the oil leaves at the edges)
Transfer the dish in a serving bowl
Garnish with some coriander
Serve hot with rice, dosa, chapathi
