Ingredients

Serves : 6
  • 2 nos onion,mdm size (cubed)


  • 1 nos tamato, big (cubed)


  • 1 cups coconut,(grated)


  • 10-12 nos garlic pods


  • 1/2 inch ginger


  • 1 tbsp sesame seed


  • 1 cups coriander leaves


  • 3 tbsp udupi ruchi sambhar powder


  • 1 tbsp salt,(adjust to ur taste)


  • 3 tbsp oil


  • 3 cups water


  • 3 nos cloves


  • 3 nos dalchini


  • 10 nos brinjal(cut length wise)

Directions

  • In a pan add 1 tbsp of oil
  • Heat it & add
  • Next add in cubed onion & fry for 3 mins
  • Add tomoto & fry for 2 min
  • Add sesame seeds & fry for a min
  • Lastly add curry powder & fry for 2 mins
  • Allow this mixture to cool
  • Grind it to a smooth paste with coconut & coriander with some water
  • Take a kadai & put 2 tbsp of oil & heat it
  • To this add 1/2 finely chopped onion & fry it
  • Then add in chopped brinjal & fry for 3-4 mins
  • Next add the grounded mixture & fry it for 3 mins
  • Add water & salt
  • Boil for 20 mins ( or until the oil leaves at the edges)
  • Transfer the dish in a serving bowl
  • Garnish with some coriander
  • Serve hot with rice, dosa, chapathi
