Brinjal Curry

Ingredients

Serves 6

  • Onion,mdm size (cubed) 2 nos

  • Tamato, big (cubed) 1 nos

  • Coconut,(grated) 1 cups

  • Garlic pods 10-12 nos

  • ginger 1/2 inch

  • Sesame seed 1 tbsp

  • Coriander leaves 1 cups

  • Udupi Ruchi Sambhar Powder 3 tbsp

  • Salt,(adjust to ur taste) 1 tbsp

  • Oil 3 tbsp

  • Water 3 cups

  • Cloves 3 nos

  • Dalchini 3 nos

  • Brinjal(cut length wise) 10 nos

    In a pan add 1 tbsp of oil

    Heat it & add

    Next add in cubed onion & fry for 3 mins

    Add tomoto & fry for 2 min

  • 05

    Add sesame seeds & fry for a min

  • 06

    Lastly add curry powder & fry for 2 mins

    Allow this mixture to cool

    Grind it to a smooth paste with coconut & coriander with some water

    Take a kadai & put 2 tbsp of oil & heat it

    To this add 1/2 finely chopped onion & fry it

    Then add in chopped brinjal & fry for 3-4 mins

    Next add the grounded mixture & fry it for 3 mins

    Add water & salt

  • 14

    Boil for 20 mins ( or until the oil leaves at the edges)

    Transfer the dish in a serving bowl

    Garnish with some coriander

    Serve hot with rice, dosa, chapathi
