Make a smooth dough with all the ingredients and cover it with a moist cloth and set aside for about 10 minutes.
Use of water depends upon the quality of the flours used.
Add water little by little when kneading the dough.
After 10 minutes of rest, using a chakli press with the 3 hole nozzle, make circular rings in a clockwise manner.
Oil should be hot but while making the circular patterns, decrease the flame so that your hands stay safe from the heat.
Once you make the pattern, increase the flame to medium high or high and deep fry by turning every now and then.
Once they are light golden in colour, remove them and drain on an absorbent paper.
After done with all in the similar fashion, let them come down to room temperature before stacking them up in air-tight containers.
They become more crunchy as they cool down. Enjoy them with a hot cup of tea or coffee.
This one is my innovative idea and i do hope you will try these yummy janthikalu with a new twist. Happy Frying !!!!!!!!
