Total Time : 40 Min

Ingredients

Serves : 14
  • 5 cups rice flour

  • 1 cups gram flour or besan

  • 2 tbsp hot oil or ghee

  • 2 tbsp salt

  • 3 tbsp red chilli powder

  • 2-3 tbsp kasoori methi

  • 1 tsp turmeric

  • 1 tbsp cumin seeds

  • 1 tbsp grated ginger

Directions

  • Make a smooth dough with all the ingredients and cover it with a moist cloth and set aside for about 10 minutes.
  • Use of water depends upon the quality of the flours used.
  • Add water little by little when kneading the dough.
  • After 10 minutes of rest, using a chakli press with the 3 hole nozzle, make circular rings in a clockwise manner.
  • Oil should be hot but while making the circular patterns, decrease the flame so that your hands stay safe from the heat.
  • Once you make the pattern, increase the flame to medium high or high and deep fry by turning every now and then.
  • Once they are light golden in colour, remove them and drain on an absorbent paper.
  • After done with all in the similar fashion, let them come down to room temperature before stacking them up in air-tight containers.
  • They become more crunchy as they cool down. Enjoy them with a hot cup of tea or coffee.
  • This one is my innovative idea and i do hope you will try these yummy janthikalu with a new twist. Happy Frying !!!!!!!!
