For making kucho nimki first we start with making the dough.
In a big bowl add flour,salt,kalojeera and oil. Now start mixing it,we called it mayan. This process makes nimki crunchy and more fluffy. After 5 minutes add water and make a medium dough not very soft or hard.
Cover it up and rest it for 20 minutes.
Make 2 balls out of that dough,with the help of rolling pin flatten it in medium thickness not very thin.
With a knife cut them in diamond shape.
Heat oil in frying pan,fry nimkis in low flame to make it crunchy.
Serves hot or store them in an airtight container after it gets cold.
