Ingredients

  • 2 cups maida/all purpose flour


  • 1 tbsp kalonji/kalojeera


  • 2 tbsp vegetable oil for making dough


  • 1 cups water


  • 2 tsp salt


  • 2 cups vegetable oil for frying

Directions

  • For making kucho nimki first we start with making the dough.
  • In a big bowl add flour,salt,kalojeera and oil. Now start mixing it,we called it mayan. This process makes nimki crunchy and more fluffy. After 5 minutes add water and make a medium dough not very soft or hard.
  • Cover it up and rest it for 20 minutes.
  • Make 2 balls out of that dough,with the help of rolling pin flatten it in medium thickness not very thin.
  • With a knife cut them in diamond shape.
  • Heat oil in frying pan,fry nimkis in low flame to make it crunchy.
  • Serves hot or store them in an airtight container after it gets cold.
