Green Apple Pilaf

Ingredients

Serves : 7
  • 4-5 cups basmati rice


  • 1/4 cups ghee


  • 1/4 cups oil


  • 3 nos onions sliced


  • 1 cups spring onions chopped


  • 1 tbsp red chilli flakes


  • 1 1/2 tbsp ginger garlic green chilli paste


  • 5 nos cloves


  • 4 nos cinnamon sticks


  • 5 nos green cardamom pods


  • 3 nos bay leaves


  • 1 nos star anise


  • 6-7 nos green apples cored and cubed


  • 1/2 cups coriander leaves chopped


  • 8-10 cups vegetable stock


  • 1 tbsp roasted cumin powder


  • 1 tbsp roasted coriander powder


  • 1 tsp udupi ruchi garam masala powder


  • 1/4 cups raisins


  • 1/4 cups mixed nuts toasted,(optional)


  • 1/8 tsp asafoetida


  • 1 1/2 tbsp salt


  • 1 tsp caraway seeds

Directions

  • First of all, soak the rice for 20 minutes.
  • Cook it al dente using the vegetable stock and half of the salt.
  • Keep aside.
  • In a pan, heat ghee and oil.
  • Saute the onions until done for about 2 to 3 minutes.
  • Add the whole spices one by one.
  • Add the asafoetida too with the cubed apple pieces.
  • Now add the powdered spices and give it all a good mix.
  • Add the chopped green onions too
  • Cover and cook for 4 to 5 minutes until the apples get tender.
  • Do not over cook it. Apples usually get done in 4 to 5 minutes on a low flame.
  • Now add the rice and sprinkle garam masala. Give all that a good mix. Cover and simmer on low flame for 10 to 12 minutes.
  • Garnish with toasted nuts and raisins.
  • Also garnish with coriander leaves for that heavenly aroma.
  • This is my innovative recipe by using green apples. As these are already sour, there is no need to add any lemon juice. Favourite veggies can also be added to it. Spice levels can be adjusted too. This can be made with leftover rice too.
