Ingredients
Serves 3
Poha 1 cups
Mustard seeds 1/4 tsp
Cumin seeds 1/2 tsp
Curry leaves 1 sprig
Onion ,chopped 1 nos
Green chilly,chopped 1 nos
Tomato,chopped 1 nos
turmeric powder 1/2 tsp
Udupi ruchi garam masala powder 1 tsp
Coriander powder 1/2 tsp
green peas 3 tbsp
French beans ,chopped 5-6
Carrot ,small,chopped 1 nos
Roasted peanut.crushed 3 tbsp
Sugar 1 pinch
Coriander leaves,chopped 2 tbsp
Lemon Juice 1 tsp
Salt,as per your taste 1 tsp
Oil 2-3 tbsp
Directions
Soak the poha for few mins in water and drain the water completely. Keep aside.
Heat oil in a pan. Add the mustard seeds and cumin seeds and let it crackle.
Add the sugar, curry leaves, onions, green chillies and saute till onion turns soft.
Add tomatoes and saute for a min or two. Add the turmeric powder, coriander powder and udupi ruchi garam masala powder and saute for a min.
Add the chopped vegetables and saute for about 5 mins.
Add the soaked poha, roasted peanut, chopped coriander leaves and gently mix well. Cover the pan with lid for few mins and take off the heat.
Squeeze the lemon juice and serve hot.
