Ingredients

Serves : 2
  • 1/4 cups samak ke chawal (moraiyo or barnyard millet)


  • 1/2 litre nova full cream milk


  • 8 nos saffron strands


  • 1/3 cups sugar


  • 1/2 tsp nova ghee


  • 5 nos almonds blanched and chopped


  • 5 nos cashew nuts chopped


  • 10 nos raisins


  • 1/4 tsp green cardamom seeds powder


  • 1/2 tsp green pistachios chopped

Directions

  • Wash the samak rice well and soak in enough water for at least 30 minutes.
  • Soak saffron in 1 tsp milk in a small bowl.
  • After 30 minutes, drain all the water from rice and sauté in 1/2 tsp nova ghee in a shallow pan on medium flame.
  • Heat the milk in a heavy bottom pan and bring to a boil.
  • Add roasted rice to it and cook on a low flame, while stirring continuously.
  • Cook for about 15 minutes or till samak rice becomes soft and mushy.
  • Keep scraping the sides of the pan.
  • now add sugar
  • Add dry nuts, almonds, cashews and raisins
  • Add cardamom powder and saffron milk and mix well.
  • Cook for another 2-3 minutes or till kheer thicken slightly.
  • Finally switch off the flame.
  • Garnish with pistachios and saffron strands.
  • Serve hot or warm or chilled as per the liking.
