Take 1 cup sugar and water in a pan and boil to make sugar syrup.
When the syrup becomes sticky and two-string consistency, switch off the gas and allow it to cool.
Now take a bowl and mix mawa (khoya), sugar (1/3 cup) and vanilla essence all together
Mash them and mix well. Keep it aside
Now make a dough using all purpose flour, food colour, ghee and water as required.
Make small equal size ball from the dough.
Take each dough and make a round shape using a rolling pin.
Keep a spoonful of stuffing inside and fold it like semi-circle. Seal the edges properly.
Now fold it one more time so that it looks like log.
Next fold the log shape such a way that both ends overlap on each other so that it looks like an envelope.
Finally seal the overlapped edges using cloves.
Follow the above steps for remaining dough.
Now heat oil and deep fry them over medium flame.
Dip the fried dumplings into sugar syrup for 15 to 20 minutes and later serve.
