Cut the peeled potatoes into thick wedges and keep them immersed in cold water until the oil gets heated for frying.
As soon as the oil is heated up, drain the potato wedges and add them to a wide bowl.
Add the spices one by one except the chat masala.
Give it all a good mix and start frying immediately. Do not delay because potatoes tend to lose a lot of water.
Deep fry in hot oil on high flame turning every now and then for even frying.
After done, sprinkle some chat masala on top and serve hot as a snack or as a side dish with any gravy.
