Cut drumstick into 1½ inch pieces.
Chop potato into big cubes.
Cut the bhindi,gobhi, gavar as per size preferred. Heat the oil in a deep pan
Add hing, grated ginger, mustard seeds, fenugreek seeds, cumin seeds and curry leaves to the pan and sauté till fragrant.
Add gram flour and mix and sauté till fragrant.
Stir continuously till about 20 minutes for the color to change to deep golden brown.
Add tomatoes, turmeric powder, red chilli powder and salt and mix well.
Add 6 to 7 cups water.
Add drumstick, bhindi, gobhi and guar and potatoes and let them cook on low flame till soft.
Will take about 20 minutes with partially covered lid on.
When the vegetables are cooked, add tamarind pulp and mix well. Cook for 1-2 minutes.
Serve hot with steamed rice and sweet boondi.
