QQ Mentaiko Udon(Spicy Cod Roe Udon)

Ingredients

Serves 2

  • Dried Udon (or fresh/frozen udon for 2 pax) 240 gms

  • Butter 10 gms

  • Mentaiko Sauce: Japanese Mayonnaise 2 tbsp

  • Mentaiko (Spicy Cod Roe or can substitue with Tarako - non spicy version) 2 tbsp

  • Mirin 2 tsp

  • Sake 1 tsp

  • Sugar 1 tsp

  • pepper 1 dash

  • Toppings:Julienned Japanese Cucumber 1 nos

  • Shredded Roasted Seaweed 1-2 nos

Directions

  • 01

    Cooking the Udon: Prepare a pot of boiling water and add 1 teaspoon of salt to the water

  • 02

    Cook the udon as per the packaging instruction

  • 03

    Preparing the Mentaiko Sauce: Add all ingredients for the sauce into a mixing bowl

  • 04

    Mix well and set aside

  • 05

    Tossing the noodle: When the noodle is cooked, drain and transfer to a large mixing bowl

  • 06

    Add the mentaiko sauce and butter

  • 07

    Toss until the butter melt and the noodles are well coated with the sauce

  • 08

    Transfer to udon to the serving plates

  • 09

    Top with shredded cucumber and seaweed

  • 10

    Add more mentaiko if preferred
