Ingredients

Serves : 4 serving
  • 1 Tablespoon veg oil


  • 1/2 Teaspoon mustard seeds (optional)


  • 1 Teaspoon cumin seeds


  • 1/2 slice onion


  • 1 Tablespoon ginger


  • 2 Cloves garlic


  • 1/2 Teaspoon black pepper


  • 1 Cup quinoa. red or white or mix.


  • 2 Cups boiling hot water or veg or chicken broth


  • 1 Cup mix veg.. peas/carrots/green beans

Directions

  • Heat oil. Add Cumin and Mustard Seeds. Add Onions and cook 3 mts. Add Ginger and Garlic cook 1 minute. At this point Get your Boiling Water or Broth ready.
  • Add Quinoa and toast a couple of minutes and add Liquid (water of broth) If using chicken broth - dont add salt otherwise add 1/2 teaspoon salt. Bring to boil and simmer covered for 15 mts. Quinoa will be ready.
  • Get a mix vegetables - anything will be ok. Green Beans ,Brocoli, Carrots, Spinich whatever you like. Mix it with Quinoa and serve.
