Clean and peel the mangoes,slice them into medium size,Keep aside
In a bowl ,add sliced onion,chopped ginger,chopped green chillies,chopped garlic,coconut oil and little salt
Mix it well and keep it aside for 5 min
Add mango,along with turmeric powder,red chilly powder and coriander powder
Mix well and keep it aside for another 5 minutes
Heat coconut oil in a pan and add mustard seeds,fenugreek seeds,dry red chilly,curry leaves and sliced shallots
Fry until shallots turns golden brown and switch off the flame and pour this over the curry
