Serves 4

  • chicken breasts 3 nos

  • Red pepper 1/2 nos

  • Yellow pepper 1/2 nos

  • Whole grain rice 1 1/2 cups

  • onion 1/2 nos

  • Salt 3 tsp

  • Pepper 2 tsp

  • Curry powder 3 tbsp

  • Chicken stock cube 1 nos

  • Flour 3 tbsp

  • water 500 ml

  • Mango chutney 1 tbsp

  • Butter 25 gms

    Set the rice to boil with 2 tsp Salt

    Cut up your chicken into bite sized chunks

    Dice the onion into small pieces as to not overwhelm the curry

  • 04

    Chop the peppers up into medium pieces

  • 05

    Fry your onion until soft and add your chicken with the peppers

  • 06

    Into a sauce pan add your butter and melt it, once all melted add in your flour slowly

    Once the butter and flour comes together add the water a little bit at a time until it feels like a smooth slightly thickened soup

    Add your chutney, salt,pepper and curry and mix until no lumps are left

  • 09

    Add the chicken with the veg into the curry and leave to simmer for a few minutes stirring occasionally

    When the rice is done, drain and plate you food rice first with a little well in the middle and pour your chicken curry into the well as to hold more curry throughout the rice
