Ingredients

Serves : 6
  • 1 medium sized squash


  • 3 medium potatoes


  • 1 litre of water


  • 1 vegetable stock cube


  • 1 medium onion


  • 1 1/2 tsp parsley


  • 2 tsp Salt and pepper

Directions

  • Cut up your squash into chunks and peel all the skin off
  • Chop your onions and potatoes
  • Pour 1 litre of water into a deep enough sauce pan to fit everything in
  • Crumble in your stock cube when the water starts to simmer
  • Add all the chopped up vegetables
  • Keep the water at a constant simmer until the vegetables are soft
  • Once everything is soft in the sauce pan , turn off the heat and using a hand held blender, blend until there are no lumps left
  • Put the salt, pepper and the parsley into the blended soup and mix in
  • If you want at this point add some sour cream or milk to make it creamy
