Ingredients

Serves 6

  • 1 medium sized squash

  • 3 medium potatoes

  • 1 litre of water

  • 1 vegetable stock cube

  • 1 medium onion

  • 1 1/2 tsp parsley

  • 2 tsp Salt and pepper

Directions

    Cut up your squash into chunks and peel all the skin off

  • 02

    Chop your onions and potatoes

  • 03

    Pour 1 litre of water into a deep enough sauce pan to fit everything in

  • 04

    Crumble in your stock cube when the water starts to simmer

  • 05

    Add all the chopped up vegetables

  • 06

    Keep the water at a constant simmer until the vegetables are soft

  • 07

    Once everything is soft in the sauce pan , turn off the heat and using a hand held blender, blend until there are no lumps left

    Put the salt, pepper and the parsley into the blended soup and mix in

  • 09

    If you want at this point add some sour cream or milk to make it creamy
