Ingredients

Serves 8

  • Kadalapariappu 2 cups

  • Sugar 2 cups

  • Maida 1 1/2 cups

  • Ginger oil 1/2 cups

  • Nutmeg powder 2 pinch

  • Rice flour ,for spreding on board 1/4 cups

  • Udupi Ruchi Kesari Bath powder 2 pinch

  • ghee,for frying 1/2 cups

Directions

    Boil the gram with plenty of water

  • 02

    When nicely cooked, strain

  • 03

    Add water once again, boil &anddrain

  • 04

    Add sugar and nutmeg powder to the cooked gram and keep on low heat till the mixture becomes semi solid

    Stir constantly

  • 06

    Remove from fire and grind to a fine paste

  • 07

    Add kesari powder to the maida flour and with a little water and make into a dough

  • 08

    Pour gingelly oil into the dough and knead it, until it becomes very soft

  • 09

    Keep it side for 2 or more hours

    Make equal number of balls with the dough and the gram mixture

  • 11

    Take a ball of gram, cover it with maida ball and turn onto a floured board (rice flour to be used on the board) & roll out as thinly as possible

  • 12

    Apply a little ghee on griddle and fry (like we do for chappatis) the boli on it
