Ingredients

Serves 8

  • Coconut Oil/any Veg Oil,adjust as per your taste 3 tbsp

  • Mustard Seeds 1/4 tsp

  • Shallots/Pearl Onion,peeled and diced(you can use 3 big onions instead of shallots) 200 gms

  • Garlic Cloves,peeled and diced 3 nos

  • Green chilly,slit lengthwise 2-3 nos

  • Curry Leaves 5-6 nos

  • Potato,peel and dice into small pieces 1 nos

  • Yam/Chena,peel and dice into small pieces 100 gms

  • Drum Stick,clean and cut into lengthwise 1 nos

  • Egg Plant/ Brinjal,dice into small pieces 2 nos

  • Ladies Finger/Okra,cut into lengthwise 5-6 nos

  • Tomato ,Diced 1 nos

  • Tamarind Water-From 1 gooseberry size,Soak in ½ cup water,Strain and take juice 1/2 cups

  • Turmeric Powder (Extra) 1/2 tsp

  • Chilly Powder (Extra) 1 tsp

  • Salt,as per your Taste 1 tsp

  • Sugar for taste 1 pinch

  • Water,as per required 1 cups

Directions

    Heat oil in a big pan or wok and pop mustard seeds

  • 02

    When it’s popped well, add shallots, green chilly, garlic and curry leaves

  • 03

    Stir well in a medium heat

  • 04

    When its soft and mild brown, add all vegetables except tomato and sauté well

  • 05

    Lower the heat

  • 06

    Add extra chilly & turmeric powders and salt for vegetables,Saute 2 minutes

    Add Theeyal Masala and sauté well next 2 minutes

    Add diced tomato and 2 table spoon tamarind juice,Stir well

  • 09

    When all masala well coated with vegetables, add water ( approximately 2 1/2 cups) and mix well

    Cover it and cook next 15 to 20 minutes in a medium heat

    Uncover and saute occasionally

  • 12

    Check the vegetables and gravy texture,If it is too watery, uncover and cook next few minutes

  • 13

    Do not allow it to thicken too much because it will thicken after setting

  • 14

    Taste it and add salt and tamarind juice if required

  • 15

    Add a pinch sugar for taste

  • 16

    When the vegetables cooked well and gravy light thicken, sprinkle some coconut oil for aroma

  • 17

    Turn off the heat and keep aside Theeyal for setting

  • 18

    Serve with boiled rice, moru curry and fish fries
