Ingredients

Serves : 4
  • 1 cups basmathi rice


  • 3 nos tomato finely chopped


  • 1 nos onion sliced


  • 2 nos green chilli sliced


  • 1 tbsp fresh coriander leaves chopped


  • 1 tsp ginger-garlic paste


  • 1 tsp fennel seeds


  • 1 inch cinnamon


  • 3 nos green cardamom


  • 3 nos cloves


  • 1 nos bay leaf


  • 10 nos black peppercorn


  • 1 pinch turmeric powder


  • 1 1/2 tsp red chilli powder


  • 1/2 tsp coriander powder


  • 1 tbsp ghee


  • 1 tbsp oil


  • 1 pinch salt


  • 2 cups water

Directions

  • Wash and soak the rice for 20 minutes
  • Heat a pressure cooker with ghee and oil
  • Add Fennel seeds, Cinnamon, green cardamom, cloves, bay leaf and black peppercorns and saute for few seconds
  • Add ginger-garlic paste, green chilli and saute till the raw smell disappears
  • Add onion and saute till golden brown
  • Add chopped tomatoes and cook till mushy
  • Add turmeric powder, red chilli powder, coriander powder and stir for few seconds
  • Add fresh coriander leaves, salt, measured water and allow it to boil
  • Add soaked rice, mix gently and close the pressure cooker with lid
  • Cook for two whistles and keep it in a low flame for 2-3 minutes
  • Put off the flame and open it once the pressure releases completely
  • Serve hot with any raita
