Ingredients

Serves 6

  • Raw Mango 250 gms

  • Jaggery 150 gms

  • Sugar 100 gms

  • Asafoetida 1 pinch

  • turmeric powder 1/2 tsp

  • Cumin Seeds 1/3 tsp

  • Fennel Seeds 1/3 tsp

  • Fenugreek Seeds 1/3 tsp

  • Nigella Seeds 1/3 tsp

  • Mustard Seeds 1/2 tsp

  • Whole Dried Red Chillies 3 nos

  • mustard oil 1 tbsp

  • Salt to taste 1 pinch

Directions

    Firstly, wash and wipe dry the raw mangoes

  • 02

    Cut mangoes in slices, discard the seeds

  • 03

    Dry roast cumin seeds, fennel seeds, fenugreek seeds, nigella seeds, mustard seeds and 3 whole dried red chillies for 2 minutes on medium heat

    Let it cool a little

  • 05

    Pound coarsely and set aside

  • 06

    Heat 1 tbsp oil in a pan

  • 07

    Add asafoetida in it

  • 08

    Saute for few seconds, add mangoes and turmeric powder

  • 09

    Saute for another 3 minutes on medium heat

  • 10

    Add jaggery and sugar directly, lower the heat now

  • 11

    Now jaggery and sugar melt

  • 12

    Add salt in it and let mangoes cook in the syrup for 5 min on lower heat

  • 13

    When the density of the gravy will be thicker, remove the pan from heat

  • 14

    Sprinkle coarsely pounded spices on it

  • 15

    Fold well

  • 16

    Your luscious mango pickle is ready now

  • 17

    Store the mango pickle in a clean or sterilised jar

  • 18

    Keep in a cool dark place or refrigerator
