Carrot Cake
Bake the most deliciously fluffy and moist cake for any occasion with these yummy and simple cake recipes!

Ingredients
Serves :

2 cups sugar
4 nos eggs
1 1/2 cups sunflower oil (any flavourless)
1 tsp vanilla essence
2 3/4 cups plain flour
3 tsp baking powder
2 tsp ground cinnamon
5 nos medium sized carrots
Directions
Whisk the eggs, sugar and oil until thick
Add flour, cinnamon and baking powder and mix together
Add in the shredded carrots and mix until everything is saturated
Add in chopped almonds, walnuts and hazel nuts
Pour into a gresed deep baking pan
Once baked leave to cool off for 15 mins
When cooled you can spread a layer of icing if you want to. I left mine plain since that is my preference
