Ingredients

Serves 8

  • sugar 2 cups

  • eggs 4 nos

  • sunflower oil (any flavourless) 1 1/2 cups

  • vanilla essence 1 tsp

  • plain flour 2 3/4 cups

  • baking powder 3 tsp

  • ground cinnamon 2 tsp

  • medium sized carrots 5 nos

Directions

    Whisk the eggs, sugar and oil until thick

  • 02

    Add flour, cinnamon and baking powder and mix together

  • 03

    Add in the shredded carrots and mix until everything is saturated

  • 04

    Add in chopped almonds, walnuts and hazel nuts

  • 05

    Pour into a gresed deep baking pan

  • 06

    Once baked leave to cool off for 15 mins

  • 07

    When cooled you can spread a layer of icing if you want to. I left mine plain since that is my preference
