Ingredients

Serves : 8
  • 2 cups sugar


  • 4 nos eggs


  • 1 1/2 cups sunflower oil (any flavourless)


  • 1 tsp vanilla essence


  • 2 3/4 cups plain flour


  • 3 tsp baking powder


  • 2 tsp ground cinnamon


  • 5 nos medium sized carrots

Directions

  • Whisk the eggs, sugar and oil until thick
  • Add flour, cinnamon and baking powder and mix together
  • Add in the shredded carrots and mix until everything is saturated
  • Add in chopped almonds, walnuts and hazel nuts
  • Pour into a gresed deep baking pan
  • Once baked leave to cool off for 15 mins
  • When cooled you can spread a layer of icing if you want to. I left mine plain since that is my preference
