Ingredients

Serves : 3
  • 1/2 tsp salt


  • 1/2 tsp pepper


  • 7 nos cherry tomatoes (any type really)


  • 1 1/2 cups lamb lettuce and pea shoots (welcome to add other veg)


  • 2 nos eggs


  • 1 1/2 cups shredded cheddar cheese


  • 4 tbsp milk


  • 1 tsp butter


  • 3 1/2 cups pasta


  • 3 sprig parsley

Directions

  • Set your pasta on boil
  • Shred your cheese if not bought shredded
  • Half the cherry tomatoes
  • Whisk up your eggs till they're smooth and a pale colour
  • Mix the eggs with the cheese until all the cheese is saturated
  • Then add your milk with the cheese and egg mixture
  • Strain your pasta when it is aldante and transfer the pasta onto a pan
  • Put the butter into the pan and fry your pasta until the butter is nearly soaked up
  • Then add the cheese and egg mixture and stir until everything comes together
  • Finally add the tomatoes, lamb lettuce and the pea shoots and fry everything for a few minutes stirring occasionally
  • Once done plate and add some shredded cheddar on top with a few sprigs of parsley and any other crunchy veg that you might want to add.
