Ingredients

Serves 3

  • ghee / clarified butter 1 tbsp

  • cashews 2 tbsp

  • raisins 2 tbsp

  • rava / sooji / semolina / bombay rava 3 tbsp

  • milk, full cream 2 cups

  • sugar 1/4 cups

  • cardamom powder / elachi powder 1/4 tsp

Directions

    firstly, in a large thick bottomed kadai heat ghee

  • 02

    further add handful of dry-fruits and roast till golden brown

  • 03

    transfer to a plate and keep aside

  • 04

    now add 3 tbsp of rava and roast till they turn aromatic

  • 05

    make sure to roast on low flame, else rava might burn

  • 06

    now add add in 2 cups milk and ΒΌ cup sugar

  • 07

    stir well and boil for 3 minutes or till sooji cooks well

  • 08

    stir and check for the consistency, make sure the kheer has thickened slightly

  • 09

    add in cardamom powder and roasted dry fruits

  • 10

    finally, serve rava kheer hot or refrigerate and serve chilled
