Ingredients

Serves 4

  • Kolam Rice 1 cups

  • full fat milk 1 litre

  • Water 1/2 cups

  • Sugar 2/3 cups

  • cardamom powder 1/2 tsp

  • Ghee 2 tbsp

  • Cashew nuts 8-10 nos

Directions

    wash and soak the rice for 10 minutes. Later drain the water and keep aside.

    Boil the milk and reduce the quantity to approximately 700 ml.

    Heat 1 tbsp ghee in a pressure cooker and roast the cashew nuts. Take them out and keep aside.

    Now add the remaining ghee in pressure cooker and

    Next add the reduced milk slowly into the rice and mix well.

    Once the milk starts boiling close the lid and allow one or two whistles.

    After the pressure releases, switch on the gas.

    Now add sugar, cardamon powder and water. Mix them well and cook under low flame for 10 minutes.

    Switch off the gas and garnish with roasted cashew nuts.

    Allow to cool the paal payasam and serve it.
