Ingredients

Serves 3

  • carrots 3 nos

  • milk 1 litre

  • sugar 2 cups

  • ghee 2 tsp

  • raisins and cashews 1/4 cups

Directions

    Peel, chop and steam carrots in pressure cooker

  • 02

    Grind the steamed carrots into a fine paste

  • 03

    Heat 1/2 tsp of ghee in a heavy bottomed vessel

  • 04

    Add the ground carrot and fry for 3-4 minutes on medium heat

  • 05

    Add the milk and allow it to boil

  • 06

    Then keep stirring till it gets reduced to half the quantity

  • 07

    Add sugar and cook further till sugar is completely dissolved

  • 08

    Switch off the stove

  • 09

    In another pan, heat the remaining ghee and fry the raisins and cashew nuts

  • 10

    Garnish the payasam with the fried dry fruits

  • 11

    Serve hot
