Ingredients

Serves : 3
  • 3 nos carrots


  • 1 litre milk


  • 2 cups sugar


  • 2 tsp ghee


  • 1/4 cups raisins and cashews

Directions

  • Peel, chop and steam carrots in pressure cooker
  • Grind the steamed carrots into a fine paste
  • Heat 1/2 tsp of ghee in a heavy bottomed vessel
  • Add the ground carrot and fry for 3-4 minutes on medium heat
  • Add the milk and allow it to boil
  • Then keep stirring till it gets reduced to half the quantity
  • Add sugar and cook further till sugar is completely dissolved
  • Switch off the stove
  • In another pan, heat the remaining ghee and fry the raisins and cashew nuts
  • Garnish the payasam with the fried dry fruits
  • Serve hot
