BHUJAIN WITH MUDHI (LIVER FRY WITH PUFFED RICE)

Ingredients

Serves : 2
  • 250 gms liver cut into bite size


  • 1/2 nos fresh lungs cut into small pieces


  • 1/2 cups intestine


  • 2 nos goat fat pieces


  • 4 nos onion arge finely chopped lengthwise


  • 1 tbsp garlic paste


  • 1 tbsp ginger paste


  • 1 tsp coriander powder


  • 1/4 tsp chilly powder


  • 1/2 tsp turmeric powder


  • 1/4 tsp garam masala powder


  • 1/2 tsp cumin seeds


  • 2 nos bayleaf


  • 1 pinch black pepper powder - to taste optional


  • 6-8 tbsp mustard oil/ vegetable oil


  • 1 nos tomato finely chopped


  • 4 nos whole red chillies


  • 1 tsp coriander leaves

Directions

  • Wash liver, lungs, intenstine and fat pieces nicely and keep it in strainer for drain excess water
  • Heat oil in a heavy bottom pan on high flame
  • Now reduce heat on medium heat
  • Crack cumin seeds , bay leaves and red chillies for 15 sec
  • Add sliced onion and little salt together n fry for 5 -7 minutes or till start turning little pink colour
  • Add all pieces in pan and fry for 5 minutes
  • Now add ginger - garlic paste and fry for another 2 min n stir once or twice
  • Add chopped tomato, turmeric, chilly and coriander powder and fry for another 7 min with lid on low flame
  • Stir properly in between 2-3 times to save from burning
  • Add salt and garam masala powder n fry till oil comes out from fried liver
  • Sprinkle little water in masala and stir continuously
  • Just take out one piece from pan and check it whether it is done or not
  • If it is well cooked sprinkle coriander leaves
  • Serve hot liver fried with Mudhi (Puffed rice) / Chura bhuja (Roasted beaten rice), onion salad and green chillies
