Ingredients

Serves : 4
  • 3 cups all purpose flour (maida)


  • 2 tbsp suji


  • 1/4 cups ghee/dalda /vegetable oil


  • 1 tsp anseed seeds (ajwain seeds)


  • 1/2 tsp kalonji / mangrail/ onion seeds


  • 2 pinch baking soda


  • 1/4 cups mint leaves /fresh pudina leaves


  • 1 tsp salt


  • 150 ml vegetable oil for deep frying

Directions

  • Seive all purpose flour and suji together, Mix all dry ingredients together as salt, anseed seeds, Kalonji, chilly powder and baking soda properly
  • Now add 1/4 cup oil, 1/4 cup mint leaves and rub for 10 minutes with help of both hand, Add little - little warm water and knead hard dough
  • Make big size balls
  • Now make 1/2 cm thick round shape chapati and cut it like picture
  • Take out all pieces from board
  • Heat vegetable oil in a deep fry pan or kadhai on medium heat
  • Drop nimki pieces slowly n carefully in oil and deep fry till pink or light brown colour
  • Take out all pieces very carefully and keep it on brown paper/ strainer to drain excess oil
  • Cool it down naturally or in fan air
  • Check nimki before keep in jar,It should be completely cool and dry
