Peel off pumpkin and wash it, Cut into medium cubes size
Heat oil in a heavy bottom kadhai on high flame
Reduce heat on medium, crack cumin seeds and bayleaf till aroma comes out
Add chopped onion n fry till colour changed
Add pumpkin pieces and fry for a minute,Add garlic paste, ginger, tumeric powder, both chilly and jeggery n stir properly
Put lid on kadhai and cook pumpkin for 5 minutes on low flame,Stir gently in between once or twice
Now increase flame on medium heat
Add tamarind paste, garam masala and salt to taste n stir very gently,Cook until oil comes out
Sprinkle freshly chopped coriander leaves and switch off gas stove
Serve hot with paratha, pooris, chapati or rice as main course vegetable,This recipe compliments with pooris
