Cut eggplants in two or three pieces according to size, Now cut it from one side lengthwise in 4 - 6 pieces according to thickness but it should be connected from another side so that spices could be fill inside properly
Except oil mix all spices together in a bowl with very little water, Keep it like this for 10 minutes
Take a piece of eggplant, fill little spices paste inside, Repeat this process for rest of pieces
Now steam eggplants in a steamer till it becomes tender at least for 10 - 15 minutes,Cool it down
Heat little oil in a heavy bottom frypan on medium heat
Put some pieces in pan and fry both sides till golden brown
Repeat this process with rest of pieces,Add little oil while frying
Serve it with chapati or rice as a side dish or a main course items,It compliments very well with lunch or dinner
