Ingredients

Serves 4

  • Long Eggplant/ Baigan 250 gms

  • Mustard paste 2 tbsp

  • Garlic paste 1 tsp

  • turmeric powder 1/2 tsp

  • Red chilly powder 1/4 tsp

  • Coriander powder 1 tsp

  • Salt, to taste 1 tsp

  • Mustard oil ,for shallow frying 150 ml

Directions

    Cut eggplants in two or three pieces according to size, Now cut it from one side lengthwise in 4 - 6 pieces according to thickness but it should be connected from another side so that spices could be fill inside properly

    Except oil mix all spices together in a bowl with very little water, Keep it like this for 10 minutes

    Take a piece of eggplant, fill little spices paste inside, Repeat this process for rest of pieces

    Now steam eggplants in a steamer till it becomes tender at least for 10 - 15 minutes,Cool it down

    Heat little oil in a heavy bottom frypan on medium heat

  • 06

    Put some pieces in pan and fry both sides till golden brown

  • 07

    Repeat this process with rest of pieces,Add little oil while frying

  • 08

    Serve it with chapati or rice as a side dish or a main course items,It compliments​ very well with lunch or dinner
