Ingredients

Serves : 4
  • Roasted Bangal gram's flour/chana ka sattu 1 cups


  • Whole wheat flour 1/4 cups


  • Anseed seeds/ajwain 1 tsp


  • Salt to taste 1 pinch


  • Pure ghee 1 tbsp


  • LAHSUN - MIRCH KA CHATNEY( CHILLY - GARLIC DIP):Red chillies 6 nos


  • Garlic cloves 10 nos


  • Lemon juice 1 nos


  • Mustard oil 2 tbsp


  • Salt - to taste 1 pinch


  • PYAZ KA CHOKHA (SPICY ONION MASALA):Onion , finely chopped 1 nos


  • Dry red chilli 1 nos


  • Pickle masala 1 tsp


  • Mustard oil 1 tsp


  • Salt -to taste 1 pinch


  • Fresh curd 2 tbsp

Directions

  • Take a large bowl,Mix flour, sattu,anseed seeds and salt very well
  • Now knead it with help of warm water,Knead this flour mixture atleast 10 minutes
  • Cover it with a damp cloth and keep aside for half an hour
  • Heat a heavy bottom tawa / pan on medium heat
  • Now knead dough for another 1 min and make a large ball
  • Take a wooden board, spread a cotton cloth on it,Sprinkle little wheat flour on it
  • Put dough ball on wooden board and spread it with help of hand as a round shape medium thick roti
  • Now very carefully take out this roti from cotton cloth and put on hot tawa, Reduce gas stove flame to low heat and cook roti for 6 -7 minutes
  • Now turn roti and cook another side for 5 minutes
  • Now increase heat to medium flame,Put some ghee both of sides and cook until turns into golden brown both sides
  • While roti's cooking process we will make both side dishes​
  • CHILLY - GARLIC CHATNEY:Heat mustard oil in a small pan,Fry garlic cloves just for 30 seconds
  • Take a chutney jar add soaked chillies, garlic, lemon juice, salt and little water n make a fine paste
  • Take out chutney in a small bowl and add rest of mustard oil in it
  • PYAZ KA CHOKHA:Roast chilly on gas stove
  • Take a bowl mix all ingredients as chopped onion, roasted chilly, pickle masala,salt and mustard oil together, For more flavor little chopped coriander leaves can be added
  • Serve hot roti with chilly garlic dip, hot spicy onion masala and fresh curd
