Wash chiwra twice with running water and keep it in strainer
Heat oil in a heavy bottom kadhai /pan on high flame
Reduce heat, now add mustard seeds and crack for 20 seconds
Add curry leaves, green chillies and onion n fry for 1 minute, Then add chopped ginger and vegetables
Fry for 3 minutes, Stir several times to save from burning
Now it's time to add turmeric powder and salt n fry for another 1 minute
Stir well
Once mix chiwra / chura / Flattened rice in strainer very well,Then add it in fried masala and stir very well
Sprinkle 2 tbsp water in chiwra mix and cover up with lid,Reduce flame on low heat
Cook it like this for 2 minutes, Sprinkle coriander leaves and mix well
Switch off gas stove,Serve hot with tomato sauce or any chatney according to your taste buds
Sprinkle little roasted peanuts and mixture for extra crunch
