Ingredients

Serves : 2
  • Chura (Flattened rice) - 2 Cups


  • Mixed vegetables - 3/4 Cup finely chopped (Carrot, green peas, cauliflower, potatoes)


  • Onion - 1 medium finely chopped


  • Green chillies - 4 slit in the middle


  • Ginger - 1 Tsp finely chopped


  • Curry leaves - 1 stem


  • Turmeric powder - 1/2 Tsp


  • Mustard seeds - 1/2 Tsp


  • Coriander leaves - 1 Tsp


  • Vegetable oil - 2 Tbsp


  • Salt -1 pinch to taste


  • Roated peanuts / mixture - for garnish (tbsp)

Directions

  • Wash chiwra twice with running water and keep it in strainer
  • Heat oil in a heavy bottom kadhai /pan on high flame
  • Reduce heat, now add mustard seeds and crack for 20 seconds
  • Add curry leaves, green chillies and onion n fry for 1 minute, Then add chopped ginger and vegetables
  • Fry for 3 minutes, Stir several times to save from burning
  • Now it's time to add turmeric powder and salt n fry for another 1 minute
  • Stir well
  • Once mix chiwra / chura / Flattened rice in strainer very well,Then add it in fried masala and stir very well
  • Sprinkle 2 tbsp water in chiwra mix and cover up with lid,Reduce flame on low heat
  • Cook it like this for 2 minutes, Sprinkle coriander leaves and mix well
  • Switch off gas stove,Serve hot with tomato sauce or any chatney according to your taste buds
  • Sprinkle little roasted peanuts and mixture for extra crunch
