Ingredients

Serves : 2
  • 1/4 cups raw rice soaked for 1/2 an hour


  • 1 litre milk


  • 2 tbsp milk powder


  • 1/4 cups milkmaid/ condensed milk


  • 1/4 cups sugar


  • 2 tbsp ghee


  • 1/2 cups dryfruits


  • 3 cups green cardamom


  • 2 pinch salt

Directions

  • Heat ghee in a heavy bottom deep pot on medium heat
  • Fry all dryfruits and take it out from pot
  • Keep it aside
  • Add sugar and caramalise it on a high flame till it attains a light pink colour,Stir sugar continuesly to save from burn
  • Drain excess water of rice n add it in pot and mix well to coat it with caramalised sugar
  • Heat milk in a different vessel, Reduce heat of rice pot on low heat, Now add little - little quantity in rice
  • While adding milk keep your hands and face away from the pot,Do this process very carefully because milk bounce back very fastly
  • Cook it for 10 minutes,Take the milk powder and dissolve it in hot water
  • Add it to the pot, Cook it till the rice is over cooked and milk will be thick
  • Now add milkmaid and cook for another 10 minutes
  • Add green cardamom, the dryfruits and 2 pinch of salt nd mix well
  • Take it off from gas stove, Let it cool down naturally
  • Yummy and unique Kheeri is ready to serve, Usually this kheer is serve semi hot but you can have it cool also
