Ingredients

Serves : 4
  • 1 1/2 cups diced pumpkin/kohda


  • 1 cups diced potato


  • 1/2 tsp panchforan


  • 1/2 tsp tumeric/haldi powder


  • 1/2 tsp red chilly / lal mirch powder


  • 1 tsp garam masala powder


  • 3-4 nos dried red chillies


  • 1/2 cups boiled chickpeas or kabuli chana (optional but recommended as it adds new flavour to sabji)


  • 1 tsp dry mango/amchur powder


  • 1 tsp green chilly chopped (you can vary as per your need)


  • 1/2 tsp grated ginger / adark


  • 4 tbsp oil (i prefer mustard oil)


  • 1 pinch salt

Directions

  • Heat oil in kadai/wok or pan
  • Add dried red chillies and panchforan, when it start to crackle add chopped chilly with grated ginger
  • Mix well
  • After this add diced kohda/pumpkin, boiled chickpeas and potatoes
  • Then add all dry spices except dry mango powder and give a nice stir
  • Now add water if required (I prefer dry one or lutputaar means very less water), cover and cook till pumpkin become fork tender
  • Once kohda/ pumpkin is cooked add dry mango powder and mix gently
  • Switch off the flame
  • Pumpkin/Kohda sabzi is ready to serve
