Ingredients

Serves 8

  • Chicken pieces 2 kgs

  • Olive oil 2 tbsp

  • White Vinegar 2 tbsp

  • Desiccated coconut 1 1/2 cups

  • Cloves garlic , crushed 4 nos

  • Eastern Turmeric powder 1/2 tbsp

  • Eastern Chilli powder 1 tbsp

  • Eastern Black Pepper powder 1/2 tsp

  • Freshly grated ginger 1 tbsp

  • Curry leaves 10 nos

  • Sugar 1 tbsp

  • Salt to taste 1 pinch

Directions

  • 01

    Preparation-Place chicken pieces in a saucepan, cover with water and bring to boil

  • 02

    Reduce heat, cover, simmer for 30 minutes or until chicken is tender

  • 03

    Drain, reserving 1 cup (250ml) of liquid

  • 04

    Cooking-Heat oil in a saucepan, add vinegar, coconut, garlic, cumin, turmeric, chilli, pepper, ginger and curry leaves

    Saute for 2 minutes

    Add the chicken pieces, reserved stock and sugar

  • 07

    Bring to boil, reduce heat to low, cover, simmer for 15 minutes

  • 08

    Garnish with fresh coriander leaves

  • 09

    Serve hot and enjoy!!
