Ingredients

Serves : 8
  • 2 kgs chicken pieces


  • 2 tbsp olive oil


  • 2 tbsp white vinegar


  • 1 1/2 cups desiccated coconut


  • 4 nos cloves garlic , crushed


  • 1/2 tbsp eastern turmeric powder


  • 1 tbsp eastern chilli powder


  • 1/2 tsp eastern black pepper powder


  • 1 tbsp freshly grated ginger


  • 10 nos curry leaves


  • 1 tbsp sugar


  • 1 pinch salt to taste

Directions

  • Preparation-Place chicken pieces in a saucepan, cover with water and bring to boil
  • Reduce heat, cover, simmer for 30 minutes or until chicken is tender
  • Drain, reserving 1 cup (250ml) of liquid
  • Cooking-Heat oil in a saucepan, add vinegar, coconut, garlic, cumin, turmeric, chilli, pepper, ginger and curry leaves
  • Saute for 2 minutes
  • Add the chicken pieces, reserved stock and sugar
  • Bring to boil, reduce heat to low, cover, simmer for 15 minutes
  • Garnish with fresh coriander leaves
  • Serve hot and enjoy!!
