Ingredients

Serves 4

  • basmathi rice or any fragrant rice 1/2 cups

  • oil or ghee 1/2 - 2 tbsp

  • bay leaf 1 nos

  • star anise 1 nos

  • large strand of mace 1 nos

  • shahi jeera 1/2 -3/4 tsp

  • green cardamoms 3-4 nos

  • cloves 6 nos

  • cinnamon stick 2 nos

  • small piece of nut meg 1 nos

  • stone flower little 1 sprig

  • medium onion thinly sliced 1 nos

  • green chilies slit 2 nos

  • ginger garlic paste 1/2 tsp

  • handful of mint (chopped finely) 1 sprig

  • chopped vegetables 1 -1/2 cups

  • salt as needed- 1 pinch

  • water (for the whistle method, 2.5 cups water) 2 1/2 - 3/4 cups

Directions

    Preparation-Wash and soak rice for at least 15 minutes

    Drain off the water and set aside

  • 03

    Chop all the veggies and slice onions

  • 04

    Chop mint and slit green chilies

  • 05

    making veg pulao-Saute dry spices in hot oil until they sizzle

    Saute onions until golden

  • 07

    Fry ginger garlic paste until the raw smell goes off

  • 08

    Add all the veggies and mint, saute for 2 to 3 minutes

    Add water and salt

  • 10

    Bring the water to a rolling boil

    Add drained rice and stir

  • 12

    At this stage there are 2 ways to cook further

  • 13

    First method is to cover the cooker with the lid after adding rice and cook on a medium flame for 1 whistle

  • 14

    Second method is to cook on a medium flame until the water evaporates

  • 15

    When the rice is still soggy, cover with a lid or pressure cooker lid and lower the flame

    Cook on a low flame for 4 to 5 minutes

    Switch off the stove

    3When the pressure goes down, remove the lid and fluff up the rice

    Serve hot
