BROCCOLI  CARROT THORAN

Ingredients

Serves 4

  • Broccoli floret a medium 1 nos

  • carrots cleaned and grated 2-3 nos

  • Grated coconut 1/2 cups

  • turmeric powder 1-2 tsp

  • Chilly powder a small pinch optional Green chilies 2-3 nos

  • Pearl onions 2-3 nos

  • garlic 2 nos

  • Seasoning Mustard seeds 3-4 tsp

  • Dried red chilies 1 nos

  • Curry leaves 1 sprig

Directions

    Chop the broccoli grate the cleaned carrots

  • 02

    Crush the onions garlic green chillies combine the grated coconut well with this mixture turmeric powder and chilly powder

  • 03

    Mix well and set aside

  • 04

    Heat oil in a deep frying pan Splutter mustard seeds and add curry leaves saut the dried red chilies

    Add the crushed coconut mixture and stir for a few seconds till the raw smell goes

  • 06

    Now add the finely chopped broccoli carrot and enough salt

  • 07

    Mix well

  • 08

    Cover and cook till the vegetables are done

  • 09

    No water is required as there is adequate water content in both the vegetables

  • 10

    Stir occasionally

  • 11

    When almost cooked open the lid and cook till dry

  • 12

    Remove from the oven serve warm with rice
