Ingredients
Serves 4
Rice 4 cups
Arhar Dal 1 cups
Chana Dal 1 cups
Dhuli Urad Dal 1/4 cups
Dudhi (Lauki) 1 kgs
Garlic-chilli paste 1 tbsp
methi dana ( soaked in water) 1 tsp
Chana dal (soaked in water) 3 tbsp
Haldi 1 1/2 tsp
red chilli powder 1 1/2 tsp
Fresh Coriander leaves 1 tbsp
Rae 1 tsp
White til 1 1/2 tsp
kadi patta 1 tbsp
whole red chillies 4 nos
Sugar 2 tbsp
Dahi 1 cups
oil 2 tbsp
Baking Soda 1/8 tsp
salt (as per taste ) 1 tbsp
Directions
In Gujarat a special Cooker is being designed for this recepi.. I have this cooker..so i made it in handvo cooker. But if you dont have, you can make it in nonstick kadahi.
First of all we need to soak Rice and lentils for 5 to 6 hours. Then after grind and make paste out of it.
Let the Batter be little coarse.. Don't grind it very finely..Add Haldi,half quantity of dahi, turmeric, garlic-chilli paste.. Mix everything together . Now ferment this batter for around 5 hours or till it ferments.
Now Grate lauki and squeeze out water .
Grease cooker with oil.
Add lauki to batter. Add in salt to taste , remaining dahi , red chilli powder ,soaked methi dana & chana dal..
Make chaunk.. take oil..add in rae , kadi patta, red chilli ,few til.
Pour batter in cooker. Spread til on it first and then pour in chaunk all over.. Spread fresh coriander leaves.
With cooker a small plate comes into which wet fine sand is to be filled. This plate will be at base of cooker and onto top will be placed cooker.
Set and place cooker on gas.
Cook Handvo on medium flame for 10 minutes first and then reduce flame and cook for another 25 minutes or till done.
Insert a satte stick to chek whether its being cooked or not. If stick comes out clean, handvo is cooked .
Cut pieces and serve hot with Tea.
