Ingredients

  • 1 nos eggplant


  • 1 nos egg


  • 1 pinch salt to taste


  • 1 pinch pepper to taste


  • 3 cups rice


  • 1 nos clove of garlic


  • 1 nos whole onion

Directions

  • Seuté the chopped garlic and onion in low heat pan
  • When it turns to brown, put the rice and add some salt and pepper to taste and step aside
  • In a bowl, put the eggplant and smash the body with a fork until it turns flat
  • On a separate bowl, scramble an egg and pour it on the eggplant
  • Then fry
  • After it turns brown, turn off the heat then serve with sparagus(optional)
