Ingredients

  • 3 tbsp olive oil


  • 2 large onion roughly chop


  • 2 bell peppers dices


  • 4 garlic cloves finely chopped


  • 1/2 tsp cayene


  • 1 tbsp tomato puree


  • 8 riped tomato,concasse


  • 1 bunch coriender chopped


  • 1 bunch parsley chopped


  • 8 egg


  • 1tbsp red chilli paste.

Directions

  • Heat a large
  • 2- add onion,crushed garlic, bell peppers into the pan.and stir for 10-15mins and add seasoning.
  • 3- add tomato puree and sweat it.
  • 4-add red chilli paste and stir.
  • 5- add concasse of tomato and sweat it and mix it well.
  • 6- add crack the egg directly into the tomato sauce with wooden spoon create a small hole in the sauce.
  • 7- add egg each hole and apply lid and cook it for 6-8 mins
