strong coffee / espresso 12 ounces
vanilla extract 2 tbsp
Kahlua liqueur 1 1/2 cups
marscapone cheese, room temperature 16 ounces
powdered sugar 1/2 tbsp
heavy whipping cream, chilled 1 litre
lady finger cookies 500 gms
shaved dark chocolate for garnish 1/2 cups
Directions
Mix espresso, Kahlua, and vanilla in a shallow dish. Let cool before adding to cheese.
whip the heavy cream in a standing mixer with a whisk attachment on high until cream reaches semi stiff peaks. Transfer whipped cream to another Bowl
in standing mixer Bowl beat marscapone cheese with powdered sugar until smooth
and 4 tablespoons of cool espresso mixture and mix well. Gently fold in the whipped cream into the cream
dip the rounded half of the lady finger in the coffee mixture and place in a single layer in a 9 by 13 by 4 glass pan
you can break ladyfingers in half to fill in the corners if needed
put half of the filling over the lady finger layer and spread evenly dip another later
dip another layer of ladyfingers and coffee in place over the cheese

cover the top layer with one sheet of paper towels to collect condensation and cover with Saran Wrap
