Quick and Easy Blueberry Bread Recipe

  • 1 nos blueberry quick bread mix (discard canned blueberries)


  • 2 nos eggs


  • 1/4 cups vegetable oil


  • 1/2 cups water


  • 1 tsp vanilla


  • 1 cups fresh blueberries


  • 1 cups cereal


  • 1 tbsp frozen unsalted butter


  • 1/2 cups flour


  • 1 cups brown sugar


  • 1/2 cups crushed


  • 1/2 cups crushed cereal

Directions

  • So, first things first- grab your quick bread mix and mix it according to the directions. (eggs, oil, water) I add vanilla, because I am an excessive human being and add vanilla to everything. Whisk all of your ingredients together, and then add your crushed cereal to the batter. Combine and then add 1 cup fresh blueberries and stir in well. You can always use the blueberries that come with your batter mix, but I really love the way fresh blueberries taste in baked goods, plus it makes the bread a little less processed and more healthy! The cereal adds natural sweetness to the bread as well. Plus, you could always substitute the cereal I’m using with another variety of Great Grains cereal. There are 5 other types you can use like Raisins, Dates & Pecans, Cranberry Almond Crunch, Crunchy Pecans, Banana Nut Crunch!
  • Prepare a loaf pan by coating it in butter, and pour your batter in. Set to the side.
  • For the topping, first, work with your butter.
  • So, once you have grated your butter into a bowl, add the brown sugar, flour and cereal. Take a fork and start to combine the mixture. You want it to be well combined, but I love the big chunks of sugary goodness so I leave some of them. Once it’s pretty crumbly, top your batter with it.
  • Pop it into a 450 degree oven for about 40 minutes or until a knife comes out clean in the center.
  • Voila! You have yourself a delicious breakfast, snack or midnight indulgence. I like to top mine with lemon curd, and I’ll share a recipe on how I make super silky lemon curd soon!
