Slow Cooker Chicken Noodle Soup

Ingredients

Serves : 4
  • 1 kgs chicken broth


  • 3 nos chicken breasts


  • 1/2 nos large onion


  • 6 nos large carrots


  • 4 nos stalks celery


  • 1 tbsp black pepper


  • 1/2 tbsp onion powder


  • 1 tsp celery salt


  • 1/2 tsp italian seasoning


  • 1/2 tsp salt


  • 2 nos chicken bouillon cubes


  • 2 cups egg noodles

Directions

  • So, first things first, get your crock pot turned on high, chop and add onion, pour in broth and add chicken breasts. Most of the time I use fresh chicken breast but this will work with frozen as well. Your cooking time will just be extended a bit.
  • Add pepper, onion powder, celery salt, Italian seasoning, salt and bouillon. Let this sit for about 4 hours or until your chicken is done. Take out chicken breasts and shred, place back into crock pot.
  • Peel and chop carrots, dump into the slow cooker. Chop and add celery as well. If you are like me and despise cooked celery, roughly chop each stalk into 3 large pieces, this way you can fish them out easily before serving.
  • Let the carrots and celery cook into the soup for another couple of hours or until the carrots are tender. Add the noodles! Egg noodles take less than 10 minutes to cook up, so be ready to serve once they have cooked through.
  • I served ours with corn bread and ritz crackers and dinner was a hit. This bath will last us all week, or I can freeze it in a container for next time I have a hankering for Chicken Noodle Soup.
