Ingredients
Serves 3
coconut oil 1 tbsp
red onion finely chopped 1 nos
paprika 1/2 tsp
cumin 1 tsp
ground turmeric 1 tsp
garam masala 1 tsp
garlic cloves crushed 2 nos
fresh ginger 3 nos
small chicken breasts ,diced 2 nos
coconut milk 400 ml
broccoli chopped 1 nos
frozen peas 1 cups
salt 1/4 tsp
Directions
Heat coconut in a pot on medium heat and cook the onion until soft
Add the ginger, garlic and spices, stir continuously for 1 minute
Add the chicken and cook for another minute, followed by the coconut milk
Bring to the boil
Add the broccoli and peas, place the lid on and leave to cook on medium heat for 10 minutes or until the broccoli is cooked
Serve with quinoa or brown rice
