Ingredients

Serves 1

  • desiccated coconut 1/2 cups

  • ground almounds 1 cups

  • dates 3/4 cups

  • coconut oil 2 tbsp

  • salt 1 pinch

  • vanilla extract 1 tsp

  • coconut oil 1/4 cups

  • coconut milk 3/4 cups

  • cacao powder 3 tbsp

Directions

    Blend all base ingredients together in a food processor

  • 02

    If your dates are hard and dry I would first soak them in a little boiling water and drain well

  • 03

    Press the base into a baking paper lined container or dish

  • 04

    Set aside in the freezer while you prepare the topping

  • 05

    Place the coconut oil, coconut milk, cacao powder, honey and salt into a pot and heat on low to medium heat

  • 06

    Stir continuously until the mixture starts to thicken

  • 07

    Pour the chocolate topping over the base and leave to set in the freezer for an hour before slicing
